Salade nicoise – French Classic Salad
Everywhere you order a Salade nicoise you will get a different variation, depending on who is making it. The original ingredients, like tuna, anchovies, olives, garlic, and fresh tomatoes most be present in order to make it authentic. Other popular or frequently used ingredients, likes potatoes, artisan lettuce or stuffed olives are not usually used in restaurant versions, but are mostly used in home-made versions like mine. French beans, hard boil eggs, purple or black olives, crunchy lettuce, are also original ingredients that tend a great flavor combination to the Salade nicoise.
I usually cook with what I have at the moment in the pantry, and some of my family members won’t eat tuna or anchovies. I made my salad, a “wannabe” Salade nicoise, replacing the tuna and the anchovies with dried salted cod fish (Bacalao). Here is the list of the ingredients that I used in my homemade version:
Salted cod-fish (Bacalao) soaked in water the night before
green olives, diced raw onions, small capers, cilantro
heirloom red and yellow cherry tomatoes
crunchy and artisan lettuce
hard boil eggs
1/2 T mustard
4 t wine vinegar
4 T olive oil
1 mash clove of garlic

Clean under running water, and boil the salted cod-fish for 5 minutes . Drain, rinse with cold water and shred. In a big bowl, mix the shredded cod and add the olives, onions, capers, cilantro and the vinaigrette.
Arrange all others ingredients in a big salad tray and add the cod-fish. Serve with crunchy bread.
