This is a fresh and delicious summer salad made with seasonal fruits: strawberries, raspberries, baby arugula and purslane (verdolaga), a green leaf with a fresh and mild flavor. I also added some goat cheese and prepared a raspberry vinaigrette for an extra flavor punch.
Ingredients for salad:
1 small package of baby arugula
1 bunch of purslane (verdolaga)
1/2 package of mixed greens
1/2 small goat cheese cylinder cut in small pieces
2 whole trays raspberries (reserve one for the vinaigrette)
12 strawberries cut in half
1/4 cup toasted almonds, walnuts or pecans
Ingredients for the salad dressing:
1 raspberries tray
1 small shallot cut in cubes
1/2 cup balsamic vinegar
1 cup olive oil
juice of one lemon
salt & pepper to taste
For the salad: Wash all fruits and vegetables thoroughly before cutting and arranging them on a serving plate.
For the vinaigrette place all the ingredients in a blender and process until a rich and a velvety sauce is obtained. Serve over the salad.
