My grandson Evan went on a fishing trip in Corpus Christie, Texas with his little brother and step father.
Even though they got sick during the first hours of the trip, they managed to catch some delicious fish, inlcuding Blackfin tuna, Lings, Kingfish, Sharks and Mahi Mahi.
As usual, I received a very good portion of the catch. I started by making a simple Ceviche recipe with the fresh Mahi Mahi.
Here is the recipe for Mahi Mahi Ceviche!
3 Mahi Mahi fillets skinned and boned
1 small red onion chopped small
1/2 bunch of cilantro chopped
1/2 jalapeno without seeds chopped small
6 cherry tomatoes chopped small
1/4 C olive oil
Cut the Mahi Mahi fish in small cubes.
Squeeze the lemons and limes and marinate the fish.
Cover and refrigerate for at least 30 minutes.
Remove from the refrigerator and drain some of the marinating liquid.
Add the remaining ingredients, cover and refrigerate again until ready to eat.
Serve with tostadas and avocado!
